Preparation

  3. Drizzle sweet potato slices with olive oil and season with salt, black pepper, and smoked paprika. Toss to coat evenly.
  4. Spread seasoned sweet potato rounds in a single layer on the baking sheet, leaving space between each.
  5. Roast in the preheated oven for 25 to 30 minutes, flipping halfway until tender and slightly caramelized.
  6. Allow the rounds to cool slightly on the baking sheet.
  7. Transfer sweet potato rounds to a serving platter and sprinkle with feta cheese.
  8. Drizzle with honey and garnish with parsley before serving.
