- Preheat your oven to 375°F (190°C) and prepare your muffin tin with liners or grease.
- In a large mixing bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
- In a separate bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until combined.
- Create a well in the dry ingredients and pour in the wet mix. Fold together until just incorporated.
- Beat cream cheese with powdered sugar until smooth. Chill for about 10 minutes.
- Fill muffin cups with pumpkin batter and add cream cheese mixture in the center, topping with more batter.
- Gently swirl the cream cheese into the batter using a toothpick.
- Bake for 20 to 22 minutes until tops spring back and a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
