Ingredients
  

For the Salad
  • 6 cups baby spinach
  • 2 cups ripe strawberries quartered
  • 1 cup sliced almonds
  • 1 small red onion thinly sliced
  • 1 cup feta cheese crumbled
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • to taste salt
  • to taste pepper

Method
 

Preparation Steps
  1. In a small bowl, combine dried cranberries with boiling water and let sit for 10 minutes to soften.
  2. In a saucepan, melt 1 tablespoon of butter, add 1 cup shelled pistachios, and sauté for 2 minutes. Stir in 2 tablespoons of honey, chili powder, and salt.
  3. In a large bowl, combine 6 cups of baby spinach, three-quarters of quartered strawberries and cucumber slices. Drizzle with dressing and toss gently.
  4. Add remaining strawberries and cucumber on top, fold in cranberries, and sprinkle glazed pistachios.
  5. Serve individual portions of the salad, drizzling with additional dressing if desired.
