Preparation Steps
- In a small bowl, combine dried cranberries with boiling water and let sit for 10 minutes to soften.
- In a saucepan, melt 1 tablespoon of butter, add 1 cup shelled pistachios, and sauté for 2 minutes. Stir in 2 tablespoons of honey, chili powder, and salt.
- In a large bowl, combine 6 cups of baby spinach, three-quarters of quartered strawberries and cucumber slices. Drizzle with dressing and toss gently.
- Add remaining strawberries and cucumber on top, fold in cranberries, and sprinkle glazed pistachios.
- Serve individual portions of the salad, drizzling with additional dressing if desired.
