  2. While the rice cools, dice firm tofu into small cubes and pat dry.
  3. Heat vegetable oil in a skillet and sauté tofu for 5-7 minutes until golden brown.
  4. In the same skillet, sauté minced garlic for 30 seconds, then add mixed vegetables and stir-fry for 3-4 minutes.
  5. Return tofu to the skillet, add cooled rice, soy sauce, and sesame oil, mixing well.
  6. Add sliced green onions and season with salt and pepper, stir for another minute.
