Ingredients
  

For the Rice
  • 1 cup Jasmine Rice Use brown rice or quinoa for added fiber.
For the Tofu
  • 14 ounces Firm Tofu Use soft or silken tofu for different texture.
For Cooking
  • 2 tablespoons Vegetable Oil Olive or coconut oil can be used.
For the Veggies
  • 2 cups Mixed Vegetables Use fresh or frozen veggies.
  • 2 tablespoons Green Onions Regular onion or chives are substitutes.
  • 2 cloves Garlic Garlic powder can substitute fresh.
For Flavoring
  • 3 tablespoons Soy Sauce Tamari for gluten-free, coconut aminos for lower sodium.
  • 1 tablespoon Sesame Oil Olive oil for nut-free option.
  • to taste Salt
  • to taste Pepper
For Garnishing
  • 1 tablespoon Sesame Seeds Sprinkle on top before serving.

Method
 

Instructions
  1. Rinse jasmine rice under cold water until the water runs clear. Cook according to package instructions, about 15-20 minutes. Set aside to cool.
  2. Dice firm tofu into bite-sized cubes and pat dry with a kitchen towel.
  3. Heat a large skillet over medium-high heat and add vegetable oil. Once hot, add tofu cubes and cook until golden brown, about 5-7 minutes. Set aside.
  4. In the same skillet, add minced garlic and sauté for about 30 seconds. Add mixed vegetables and stir-fry for 3-4 minutes until tender.
  5. Return tofu to the skillet, add cooked rice, soy sauce, and sesame oil. Stir gently for about 2-3 minutes to combine.
  6. Toss in chopped green onions and season with salt and pepper. Cook for another minute.
  7. Serve in bowls and garnish with sesame seeds. Enjoy hot.
