For the Crust
  • 1 pkg Pie Crust Use a store-bought vegan crust or make your own.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and prepare your water bath by placing a pan filled with water on the lower rack.
  2. Line the bottom of a 9-inch springform pan with parchment paper, or set aside a store-bought crust.
  3. Blend the vegan cream cheese, plant-based yogurt, vanilla extract, cornstarch, and chosen sweetener until smooth.
  4. Pour the filling into the prepared crust, tapping the pan to remove air bubbles, then place it in the oven.
  5. Bake for 30 minutes and then let it sit in the oven for an additional 5 minutes.
  6. Remove from oven, let it cool at room temperature for 20 minutes, then refrigerate for at least 4 hours.
