- Preheat the oven to 350°F (175°C) and prepare your water bath by placing a pan filled with water on the lower rack.
- Line the bottom of a 9-inch springform pan with parchment paper, or set aside a store-bought crust.
- Blend the vegan cream cheese, plant-based yogurt, vanilla extract, cornstarch, and chosen sweetener until smooth.
- Pour the filling into the prepared crust, tapping the pan to remove air bubbles, then place it in the oven.
- Bake for 30 minutes and then let it sit in the oven for an additional 5 minutes.
- Remove from oven, let it cool at room temperature for 20 minutes, then refrigerate for at least 4 hours.
