Method

Step-by-Step Instructions for Veggie Primavera
  1. Start by washing and chopping your vegetables, including broccoli, cauliflower, carrots, sugar snap peas, and cherry tomatoes. Measure out your pasta and grated Parmesan cheese.
  2. If you’re adding chicken or shrimp, heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Cook the protein until browned and thoroughly cooked.
  3. In the same skillet, add a splash more olive oil if necessary; then toss in your chopped vegetables. Sauté them on medium-high heat for roughly 5-7 minutes.
  4. Next, add your pasta into the skillet, along with enough water or broth to cover the mixture, approximately 3-4 cups. Stir well and bring to a gentle simmer.
  5. Remove the skillet from heat and stir in the grated Parmesan cheese, allowing it to melt into the creamy sauce.
  6. If you cooked protein earlier, fold it back into the Veggie Primavera now. Serve the dish hot, garnished with a sprinkle of additional Parmesan if desired.
