Ingredients
  

For the Base
  • 1 tablespoon extra virgin olive oil can substitute with avocado oil
  • 4 cups baby spinach can replace with kale for variation
  • 1 medium shallot or use scallions
  • 1 clove garlic can substitute with garlic powder
  • 1 teaspoon cumin substitute with coriander if desired
  • 1 teaspoon ground coriander optional for milder taste
  • 0.5 cup cilantro or substitute with basil or parsley
For the Eggs
  • 5 large eggs medium eggs can be used
  • 0.5 cup water for steaming the eggs
For the Toppings
  • 0.5 cup queso fresco feta cheese works as an alternative
  • 1 medium avocado optional for serving
  • salt and pepper to taste
  • 0.25 cup micro cilantro or extra cilantro leaves for garnish

Method
 

Step-by-Step Instructions for Green Shakshuka
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add baby spinach and sauté for 3-4 minutes until wilted.
  2. In the same skillet, add 1.5 tablespoons of olive oil, then add chopped shallots and minced garlic. Sauté for 2-3 minutes until translucent.
  3. Sprinkle in cumin and ground coriander; cook for an additional 1-2 minutes while stirring. Season with salt and pepper.
  4. Return sautéed spinach to skillet, season with salt and pepper. Stir in chopped cilantro and cook for 1 minute.
  5. Transfer half of the spinach mixture to a food processor, blend with 1 tablespoon of olive oil until smooth.
  6. Return blended mixture to skillet and mix thoroughly with remaining spinach.
  7. Create five wells in the mixture, crack a large egg into each well. Cover skillet and cook for 2-3 minutes.
  8. Pour water around edges of skillet to create steam; cover again and steam for about 2 minutes.
  9. Remove lid and sprinkle half of the queso fresco over eggs; season lightly.
  10. Add remaining queso fresco and sliced avocado on top. Garnish with cilantro and serve hot.
