Step-by-Step Instructions
  1. Preheat your oven to 400°F (204°C) and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine the chopped carrots, broccoli florets, and minced garlic.
  3. Add the avocado oil, honey, soy sauce, rice vinegar, ground ginger, and 1 tablespoon of toasted sesame oil to the bowl. Toss until well-coated.
  4. Transfer the mixture onto the prepared baking sheet, spreading evenly.
  5. Roast for about 30 minutes, stirring halfway through for even cooking.
  6. Once roasted, drizzle with remaining toasted sesame oil and garnish with sesame seeds and chopped parsley before serving.
