Preparation
- Begin by taking the chicken thighs and rub them with salt and black pepper. Drizzle lime juice over them.
- In a bowl, combine yogurt, cayenne pepper, paprika, garam masala, ground cumin, and ground coriander. Stir until smooth.
- Add chicken to marinade, coat well, cover, and refrigerate for at least 6 hours or overnight.
- Preheat oven to 450°F (232°C) and arrange marinated chicken on a lined baking sheet.
- Cook the chicken for about 15-20 minutes until mostly dry with blackened tips, then flip and bake for another 10 minutes.
- Let the chicken rest for a few minutes before serving with rice or salad.
