Preparation Steps
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a medium bowl, whisk together 1 ¾ cups flour, ⅓ cup cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt.
- In a large mixing bowl, cream together ½ cup softened butter and 1 cup granulated sugar until light and fluffy.
- Add 1 large egg and 1 teaspoon vanilla extract, mixing until smooth.
- Mash 3 ripe bananas and combine with ½ cup buttermilk and optional red gel food coloring.
- Gradually combine the dry and wet ingredients, being careful not to overmix.
- In a small bowl, blend 8 ounces softened cream cheese, ½ cup powdered sugar, and 2 tablespoons milk until smooth.
- Pour two-thirds of the batter into the prepared pan, dollop cream cheese mixture on top, and swirl.
- Top with the remaining batter and swirl again; bake for 50-60 minutes.
- Cool in the pan for 15 minutes, then transfer to a wire rack.
