  • 1 ¾ cups All-Purpose Flour substitutable with gluten-free flour

  • ½ teaspoon Salt

  • 1 Large Egg or flax egg for vegan option
  • 1 teaspoon Vanilla Extract
  • ½ cup Buttermilk or yogurt mixed with vinegar for vegan

  • 8 ounces Cream Cheese softened
  • ½ cup Powdered Sugar
  • 2 tablespoons Milk or Cream for consistency

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together 1 ¾ cups flour, ⅓ cup cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt.
  3. In a large mixing bowl, cream together ½ cup softened butter and 1 cup granulated sugar until light and fluffy.
  4. Add 1 large egg and 1 teaspoon vanilla extract, mixing until smooth.
  5. Mash 3 ripe bananas and combine with ½ cup buttermilk and optional red gel food coloring.
  6. Gradually combine the dry and wet ingredients, being careful not to overmix.
  7. In a small bowl, blend 8 ounces softened cream cheese, ½ cup powdered sugar, and 2 tablespoons milk until smooth.
  8. Pour two-thirds of the batter into the prepared pan, dollop cream cheese mixture on top, and swirl.
  9. Top with the remaining batter and swirl again; bake for 50-60 minutes.
  10. Cool in the pan for 15 minutes, then transfer to a wire rack.
