Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and generously grease a standard loaf pan.
  2. In a large mixing bowl, mash the overripe bananas until smooth. Add in melted vegan butter, maple syrup, almond milk, and vanilla extract, stirring until creamy.
  3. Sprinkle the baking powder, baking soda, cinnamon, and salt into the wet mixture, folding them in gently.
  4. Add the all-purpose flour and rolled oats, stirring until no dry flour remains.
  5. Pour half the prepared batter into your greased loaf pan, smoothing it out. Generously sprinkle half of the cinnamon swirl mixture on top, then swirl gently with a knife.
  6. Spoon the remaining batter over the cinnamon layer, spreading it to cover completely. Top with the rest of the cinnamon swirl mixture and swirl again.
  7. Bake for 50–60 minutes, checking for doneness with a toothpick.
  8. Once baked, cool in the pan for 10 minutes, then transfer to a wire rack. Prepare frosting if desired.
