- Preheat your oven to 350°F (175°C) and generously grease a standard loaf pan.
- In a large mixing bowl, mash the overripe bananas until smooth. Add in melted vegan butter, maple syrup, almond milk, and vanilla extract, stirring until creamy.
- Sprinkle the baking powder, baking soda, cinnamon, and salt into the wet mixture, folding them in gently.
- Add the all-purpose flour and rolled oats, stirring until no dry flour remains.
- Pour half the prepared batter into your greased loaf pan, smoothing it out. Generously sprinkle half of the cinnamon swirl mixture on top, then swirl gently with a knife.
- Spoon the remaining batter over the cinnamon layer, spreading it to cover completely. Top with the rest of the cinnamon swirl mixture and swirl again.
- Bake for 50–60 minutes, checking for doneness with a toothpick.
- Once baked, cool in the pan for 10 minutes, then transfer to a wire rack. Prepare frosting if desired.
