Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine soy sauce, rice vinegar, sesame oil, and cornstarch. Add the chicken breasts and let them marinate for at least 15 minutes.
  2. Chop the scallions, mince the garlic and ginger, and set them aside.
  3. Heat two tablespoons of vegetable oil in a large skillet over medium-high heat.
  4. Add the marinated chicken to the skillet and sear for 5-7 minutes on one side, then flip and cook for another 5-7 minutes until golden brown and fully cooked.
  5. Stir in the minced garlic, ginger, and chopped scallions; sauté for 2-3 minutes until fragrant.
  6. If using leftover marinade, pour it into the skillet and let it simmer for 3-4 minutes to thicken.
  7. Remove the skillet from heat, let the chicken rest for a few minutes, then slice and serve over rice or noodles.
