Ingredients
  

Cherry Mixture
  • 2 cups Fresh or Frozen Cherries You can also use canned cherries in syrup.
  • 1 cup Granulated Sugar
  • 1/2 cup Amaretto Liqueur Or 1 teaspoon almond extract for non-alcoholic.
  • 1/2 cup Cherry Juice Consider using 100% tart cherry juice.
Cream Layer
  • 2 cups Heavy Cream Opt for full-fat for best results.
  • 1/2 cup Powdered Sugar
  • 1 cup Mascarpone Cheese Choose fresh and high-quality products.
  • 1 teaspoon Vanilla Extract Stick with pure vanilla for best taste.
Ladyfingers
  • 1 package Ladyfinger Cookies (Savoiardi) Choose firmer types that won’t disintegrate.
Topping
  • 1 tablespoon Cocoa Powder or Grated Dark Chocolate Choose unsweetened cocoa for a balanced flavor.

Method
 

Preparation Steps
  1. In a medium saucepan, combine fresh or frozen cherries with granulated sugar and half the amaretto. Cook over medium heat for 5-7 minutes until softened. Allow to cool slightly, then stir in remaining amaretto and cherry juice.
  2. In a large mixing bowl, whip heavy cream and powdered sugar until soft peaks form, about 3-4 minutes. In another bowl, blend mascarpone cheese with vanilla extract until smooth. Gently fold whipped cream into mascarpone mixture until well combined.
  3. Quickly dip each ladyfinger into the cherry-amaretto mixture, then arrange in a single layer in a 9x9-inch dish. Spread half of the mascarpone cream over ladyfingers followed by half of the cherry mixture. Repeat the layering process.
  4. Cover tightly with plastic wrap or lid and refrigerate for at least 4 hours, preferably overnight.
  5. Before serving, dust with cocoa powder or grated dark chocolate and garnish with fresh cherries or mint leaves if desired.
