Method
 

Preparation Steps
  1. Thaw the puff pastry according to package instructions, about 40-60 minutes at room temperature.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Whisk together sugar, cinnamon, ginger, and salt in a bowl; thinly slice pears and toss with lemon juice.
  4. Roll out the thawed puff pastry on floured parchment into a 12-inch circle, scoring a 2-inch border.
  5. Spread apple butter within the border, layer sliced pears on top, and sprinkle with sugar-and-spice mixture.
  6. Fold the pastry edges over the filling and brush with milk, then sprinkle raw sugar on the crust.
  7. Bake the galette for 15 minutes, then check and bake an additional 10 minutes until golden brown.
  8. Cool on a wire rack for at least 10 minutes before slicing.
