Streusel Topping
  • 1/3 cup brown sugar
  • 1/2 cup oats or crushed nuts
  • 1/3 cup cold butter or coconut oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or greasing it lightly.
  2. In a large mixing bowl, combine all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon; whisk until blended.
  3. In a separate bowl, melt the butter and allow it to cool. Whisk in milk and egg until smooth.
  4. Gradually add the dry mixture to the wet ingredients; stir until just combined.
  5. Fold in the diced apples carefully.
  6. In another bowl, mix cold butter, brown sugar, oats, and flour until crumbly for the streusel.
  7. Fill each muffin cup with batter and top with streusel, pressing gently.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for 5 minutes in the tin before transferring to a wire rack.
