  • 1/4 cup Fresh Parsley, finely chopped Cilantro can be substituted for a different twist.
  • 1 teaspoon Ground Cumin Reduce to half for a milder kick.
  • 1 teaspoon Ground Coriander Ground fennel works well if cumin’s not on hand.
  • 1 teaspoon Salt Adjust to taste for dietary needs.
  • 1/2 teaspoon Ground Black Pepper White pepper can be used for a softer note.
  • 2 tablespoons Olive Oil For brushing the grill.
Garlic Yogurt Sauce Ingredients
  • 1 cup Plain Yogurt Greek yogurt thickens it beautifully.
  • 2 tablespoons Freshly Squeezed Lemon Juice Lime juice is a good substitute.

Method
 

Preparation Steps
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, parsley, ground cumin, ground coriander, salt, and black pepper.
  2. Shape small portions of the chicken mixture into oval-shaped koftas.
  3. Preheat your grill or grill pan over medium-high heat and lightly brush with olive oil.
  4. Grill the koftas for 10-12 minutes, turning them every few minutes.
  5. In a medium bowl, combine yogurt, lemon juice, and a pinch of salt. Whisk until smooth.
  6. Serve the grilled koftas on a platter with garlic yogurt sauce on the side.
