  • 1 cup Cottage Cheese Good Culture recommended for thickness
  • 1/2 cup Yogurt
  • 1 tablespoon Mustard
  • 2 cloves Garlic Minced for best integration
  • 1 teaspoon Smoked Paprika
For the Salad
  • 8 ounces Pasta Cook al dente for best texture
  • 2 large Hard-Boiled Eggs Diced
  • 1 can Tuna Drained well
  • 1 cup Sweetcorn
  • 1/2 cup Gherkins Finely diced
  • 3 stalks Spring Onions Chopped
  • 1 cup Celery Diced
  • 1 cup Cherry Tomatoes Halved or quartered
  • 1 cup Cucumber Pat dry before adding
  • 1/4 cup Red Onion Diced
For the Finishing Touches
  • 2 tablespoons Cider Vinegar
  • 1 tablespoon Fresh Dill Can substitute with parsley
  • to taste Salt and Pepper

Method
 

Step-by-Step Instructions
  1. Hard-boil the eggs, cool in an ice bath, and dice.
  2. Prep your vegetables by dicing celery, spring onions, and red onion; cut cucumber and halve or quarter cherry tomatoes; finely dice gherkins.
  3. Cook pasta in salted water until al dente, drain and rinse with cold water.
  4. Blend cannellini beans, cottage cheese, yogurt, garlic, mustard, and smoked paprika until smooth.
  5. In a large bowl, combine cooled pasta and diced eggs, then pour dressing over and mix.
  6. Fold in drained tuna, sweetcorn, cider vinegar, and season with salt and pepper.
  7. Just before serving, fold in fresh veggies and adjust seasonings.
