  • 1/4 cup Fresh Parsley chopped
  • 1/4 cup Fresh Basil chopped
  • 1/4 cup Fresh Chives chopped
  • 1 teaspoon Lemon Zest optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. Pound the chicken to an even thickness of about ¼ inch between plastic wrap.
  3. Season both sides of the pounded chicken with salt and black pepper.
  4. Mix ricotta, parmesan, garlic, herbs, and lemon zest in a bowl until smooth.
  5. Place filling on one end of each chicken breast, roll tightly and secure with toothpicks.
  6. Sear the rolls seam-side down in a skillet with olive oil for 2-3 minutes on each side.
  7. Bake in the greased dish for 18-22 minutes until the chicken reaches 165°F (74°C).
  8. Rest for 5 minutes before serving, removing toothpicks prior to serving.
