- Preheat your oven to 300°F (150°C) and prepare an 8x8-inch baking pan inside a larger rimmed baking pan for a water bath.
- In a mixing bowl, whisk together eggs, milk, kosher salt, and black pepper until smooth. Pour the mixture into the prepared baking dish.
- Fill the outer pan with hot water, cover with aluminum foil, and bake for 40-45 minutes.
- While baking, wash and dry arugula, tossing with olive oil and a pinch of salt to dress.
- Mix mayo and Dijon mustard in a bowl until smooth, and set aside.
- After baking, brush the cut sides of buns with melted butter and broil for 2-3 minutes until golden. Layer cheese on buns and broil again until melted.
- Assemble sandwiches by spreading the mayo mixture on buns, layering fluffy eggs, and topped with dressed arugula.
