Method
 

Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C) and prepare an 8x8-inch baking pan inside a larger rimmed baking pan for a water bath.
  2. In a mixing bowl, whisk together eggs, milk, kosher salt, and black pepper until smooth. Pour the mixture into the prepared baking dish.
  3. Fill the outer pan with hot water, cover with aluminum foil, and bake for 40-45 minutes.
  4. While baking, wash and dry arugula, tossing with olive oil and a pinch of salt to dress.
  5. Mix mayo and Dijon mustard in a bowl until smooth, and set aside.
  6. After baking, brush the cut sides of buns with melted butter and broil for 2-3 minutes until golden. Layer cheese on buns and broil again until melted.
  7. Assemble sandwiches by spreading the mayo mixture on buns, layering fluffy eggs, and topped with dressed arugula.
