- Heat 2 tablespoons of butter in a large skillet over medium heat. Add 1 diced onion and sauté for 3-5 minutes until translucent.
- Stir in 1 cup of frozen peas and carrots. Cook for an additional 3-4 minutes until heated through.
- Add 4 cups of cold, cooked rice and 3 tablespoons of soy sauce. Mix well, cooking for about 5 minutes.
- Push the rice to one side and scramble 2 beaten eggs in the empty side for about 2 minutes. Combine the eggs with the rice.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve hot.
