  • 4 cups cold, cooked rice day-old rice is ideal
For the Veggies
  • 1 cup frozen peas and carrots or substitute with fresh
  • 2 stalks green onions chopped, reserve half for garnish
For Protein
  • 2 large eggs beaten, replace with tofu for vegan option
  • optional cooked chicken or shrimp
For Flavor
  • 3 tablespoons soy sauce use tamari for gluten-free
  • 1 tablespoon sesame seeds sprinkle just before serving

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of butter in a large skillet over medium heat. Add 1 diced onion and sauté for 3-5 minutes until translucent.
  2. Stir in 1 cup of frozen peas and carrots. Cook for an additional 3-4 minutes until heated through.
  3. Add 4 cups of cold, cooked rice and 3 tablespoons of soy sauce. Mix well, cooking for about 5 minutes.
  4. Push the rice to one side and scramble 2 beaten eggs in the empty side for about 2 minutes. Combine the eggs with the rice.
  5. Remove from heat, garnish with chopped green onions and sesame seeds, and serve hot.
