For the Tzatziki Bowl
  • 2 cup Cooked Quinoa Brown rice or couscous can be used instead.
  • 1 cup Skinny Tzatziki Enjoy homemade or store-bought.
  • 1/2 cup Authentic Feta (crumbled) Other crumbly cheeses can substitute.
  • 1/2 cup Smashed Castelvetrano Olives Feel free to use green or black olives.

Step‑by‑Step Instructions
  1. In a medium bowl, combine yogurt, olive oil, vinegar, and garlic. Add oregano, turmeric, salt, and red pepper flakes, whisking until creamy.
  2. Add chicken thighs to the marinade, ensuring they are coated. Cover and marinate for at least 10 minutes.
  3. While marinating, prepare salad ingredients by slicing cucumbers, halving tomatoes, and slicing onion. Toss with olive oil, vinegar, salt, and pepper.
  4. Heat skillet over medium heat. Cook marinated chicken for 6–8 minutes per side until golden and internal temperature reaches 165°F.
  5. Remove chicken and let it rest for 5 minutes to keep it juicy.
  6. Assemble bowls with quinoa as the base, layer salad mix, slice chicken, add tzatziki, crumbled feta, and olives on top.
