Preparation and Cooking Steps
- Cut the beef stew meat into bite-sized pieces. Parboil baby potatoes in boiling water for about 5 minutes to soften slightly.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat and sear the beef bites for about 3-4 minutes until browned.
- Melt 1/2 cup of unsalted butter in a bowl, then stir in minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper, mixing well.
- In the slow cooker, arrange par-cooked baby potatoes at the bottom, followed by the browned beef bites. Pour the garlic butter sauce over everything and add beef broth.
- Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours until meat is fork-tender.
- Once cooking is complete, remove the lid and let the dish rest for about 10 minutes before serving.
