Preparation and Cooking Steps
  1. Cut the beef stew meat into bite-sized pieces. Parboil baby potatoes in boiling water for about 5 minutes to soften slightly.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat and sear the beef bites for about 3-4 minutes until browned.
  3. Melt 1/2 cup of unsalted butter in a bowl, then stir in minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper, mixing well.
  4. In the slow cooker, arrange par-cooked baby potatoes at the bottom, followed by the browned beef bites. Pour the garlic butter sauce over everything and add beef broth.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours until meat is fork-tender.
  6. Once cooking is complete, remove the lid and let the dish rest for about 10 minutes before serving.
