  • 1 tablespoon Dried Italian Seasoning or individual herbs

  • 1/4 cup Chopped Fresh Parsley or swap with other herbs

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together milk and eggs until fully combined. Set aside.
  2. Add panko bread crumbs, Parmesan cheese, Italian seasoning, and salt and pepper to the egg mixture. Mix gently.
  3. In a skillet, heat olive oil and sauté minced garlic until fragrant, then remove from heat.
  4. Pour sautéed garlic and oil into the egg mixture with parsley. Stir well to combine.
  5. Gently fold in ground chicken until all ingredients are mixed.
  6. Preheat the oven to 350°F (175°C).
  7. Grease a loaf pan with cooking spray or olive oil.
  8. Transfer the mixture into the greased loaf pan and shape into an even loaf.
  9. Mix together melted butter and garlic powder; brush over the top of the meatloaf.
  10. Sprinkle additional Parmesan cheese on top and pour chicken broth around the meatloaf.
  11. Bake for 60 to 70 minutes until internal temperature reaches 165°F (74°C).
  12. Let the meatloaf rest for 10 to 15 minutes before slicing.
  13. Slice and serve warm with your favorite sides.
