- In a large mixing bowl, whisk together milk and eggs until fully combined. Set aside.
- Add panko bread crumbs, Parmesan cheese, Italian seasoning, and salt and pepper to the egg mixture. Mix gently.
- In a skillet, heat olive oil and sauté minced garlic until fragrant, then remove from heat.
- Pour sautéed garlic and oil into the egg mixture with parsley. Stir well to combine.
- Gently fold in ground chicken until all ingredients are mixed.
- Preheat the oven to 350°F (175°C).
- Grease a loaf pan with cooking spray or olive oil.
- Transfer the mixture into the greased loaf pan and shape into an even loaf.
- Mix together melted butter and garlic powder; brush over the top of the meatloaf.
- Sprinkle additional Parmesan cheese on top and pour chicken broth around the meatloaf.
- Bake for 60 to 70 minutes until internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 to 15 minutes before slicing.
