Ingredients

For the Dough
  • 3 cups All-Purpose Flour You can use bread flour for a chewier texture.
  • 1 tablespoon Instant Yeast No proofing required.
  • 1 teaspoon Salt Sea salt works well for a milder taste.
  • 1 cup Warm Water 110°F, essential for activating yeast.
  • 1 tablespoon Sugar Helps activate the yeast.
  • 1 tablespoon Extra Virgin Olive Oil Provides moisture and flavor.
For the Flavor
  • 3 cloves Garlic Minced, fresh garlic is preferred.
  • 1 cup Freshly Grated Parmesan Cheese Pecorino Romano is a great alternative.
  • Dried Italian Herbs/Rosemary Optional, fresh herbs provide a robust flavor.
  • 1 teaspoon Flaky Sea Salt Adds a delightful crunch.

Equipment

  • Mixing bowl
  • Stand Mixer
  • Saucepan
  • Baking Pan
  • Wire Rack

Method

Mix Dough
  1. In a large mixing bowl, combine warm water, sugar, and instant yeast. Let it sit for about 5 minutes until frothy. Gradually add flour and salt, mixing until a sticky dough forms.
  2. Knead with a dough hook for 5–6 minutes or by hand for 8–10 minutes until smooth and elastic.
First Rise
  1. Form dough into a ball, coat with olive oil, and let it rise in a warm area for 1 to 1.5 hours until doubled in size.
Prepare Garlic Oil
  1. Heat olive oil in a saucepan and add minced garlic. Cook until fragrant, about 1 minute, then remove from heat and let cool slightly.
Stretch Dough
  1. Punch down the risen dough and transfer it to a greased baking pan, pressing into corners. Let it rest for 10 minutes if it resists stretching.
  2. Cover and let rise for another 30–45 minutes until puffed.
Top and Bake
  1. Preheat your oven to 425°F (220°C). Dimple the dough surface, brush with garlic oil, and sprinkle with Parmesan cheese, herbs, and flaky salt. Bake for 20–25 minutes until golden brown.
Cool and Serve
  1. Let the focaccia cool in the pan for 5–10 minutes before transferring to a wire rack. Slice and serve warm, optionally with extra olive oil.
