  • 3 cloves Garlic (minced) Can use garlic powder if fresh isn't available.
  • 1 teaspoon Dried oregano Can swap with thyme for a unique touch.
  • 1 teaspoon Salt Sea salt is recommended.
  • 1/2 teaspoon Black pepper (freshly ground) Adjust to taste.
For the Topping
  • 1 cup Crumbled feta cheese Fresh block feta is ideal.
  • 1/4 cup Fresh parsley (chopped) Dill can be used instead.

Preparation Steps
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and freshly ground black pepper. Whisk until smooth.
  3. Wash and cut the Yukon Gold potatoes into wedges. Toss them in the dressing until coated.
  4. Spread the coated potato wedges in a single layer on a large, parchment-lined baking sheet.
  5. Place the baking sheet in the oven and roast for about 45 minutes, turning halfway through.
  6. Once the potatoes are roasted, sprinkle the crumbled feta cheese across the top while they are still hot.
  7. Garnish with freshly chopped parsley before serving.
