Step-by-Step Instructions
  1. Marinate the Chicken: In a shallow bowl, whisk together balsamic vinegar, extra-virgin olive oil, Dijon mustard, honey, minced garlic, salt, and pepper until well combined. Add thinly sliced chicken breast and toss to coat evenly. Allow to marinate for 10-12 minutes.
  2. Prep Bread and Cheese: Toast sourdough or ciabatta rolls lightly in a preheated 350°F (175°C) oven for about 5 minutes. Place slices of provolone and mozzarella cheese on the bottom half of each roll.
  3. Grill the Chicken: Heat a grill pan over medium-high heat. Grill the marinated chicken for about 5-6 minutes on each side, until cooked through and showing grill marks.
  4. Assemble the Sandwich: Place grilled chicken on top of the cheese on each roll. Sprinkle fresh chopped basil and thyme over the chicken.
