- In a small mixing bowl, whisk together fresh lime juice, lime zest, olive oil, chopped cilantro, minced garlic, salt, brown sugar or honey, red chili flakes, and ground cumin until well combined.
- Place the chicken breasts in a large resealable plastic bag or bowl, then pour the prepared marinade over the top. Seal the bag or cover the bowl, refrigerate for at least 30 minutes.
- Preheat your grill or skillet to medium-high heat, around 400°F (204°C). This ensures a delicious char on the chicken.
- Remove the chicken from the marinade, allowing excess to drip off. Grill for about 5 minutes on one side, then flip and grill for another 5 minutes until internal temperature reaches 165°F (74°C).
- Transfer the chicken to a cutting board and let it rest for 5 to 10 minutes to allow juices to redistribute.
- Slice the rested chicken into strips and serve on a salad, in tortillas, or with rice. Garnish with extra chopped cilantro if desired.
