Step-by-Step Instructions
  1. In a small mixing bowl, whisk together fresh lime juice, lime zest, olive oil, chopped cilantro, minced garlic, salt, brown sugar or honey, red chili flakes, and ground cumin until well combined.
  2. Place the chicken breasts in a large resealable plastic bag or bowl, then pour the prepared marinade over the top. Seal the bag or cover the bowl, refrigerate for at least 30 minutes.
  3. Preheat your grill or skillet to medium-high heat, around 400°F (204°C). This ensures a delicious char on the chicken.
  4. Remove the chicken from the marinade, allowing excess to drip off. Grill for about 5 minutes on one side, then flip and grill for another 5 minutes until internal temperature reaches 165°F (74°C).
  5. Transfer the chicken to a cutting board and let it rest for 5 to 10 minutes to allow juices to redistribute.
  6. Slice the rested chicken into strips and serve on a salad, in tortillas, or with rice. Garnish with extra chopped cilantro if desired.
