Ingredients
  

For the Steak
  • 1 lb Flank Steak can substitute with skirt steak
  • 1 tbsp Smoked Paprika can use regular paprika
  • 1 tbsp Chili Powder opt for cayenne for a spicier kick
  • 1 tbsp Salt adjust according to taste
  • 1 tsp Garlic Powder or use fresh minced garlic
  • 1 tsp Cumin no direct substitute necessary
  • 1 tsp Black Pepper can use white pepper
  • 2 tbsp Olive Oil or avocado oil
For the Corn Salad
  • 2 cups Fresh Corn grilling enhances flavor
  • 1 cup Crumbled Feta Cheese can substitute with goat cheese
  • 1/4 cup Cilantro or use parsley
  • 1/4 cup Green Onions or use shallots
  • 1 medium Jalapeño remove seeds for milder heat
  • 2 tbsp Lime Juice or lemon juice for a twist
  • to taste Salt adjust to liking
  • to taste Black Pepper adjust to liking

Method
 

Grilled Flank Steak Instructions
  1. Preheat your grill to medium-high heat, around 400°F (204°C). Brush the grates with olive oil to prevent sticking.
  2. Season both sides of the flank steak with olive oil, then rub with the spice blend of smoked paprika, chili powder, garlic powder, cumin, salt, and black pepper.
  3. Grill the steak for about 3-5 minutes on one side, then flip and grill for another 3-5 minutes until it reaches an internal temperature of 145°F (63°C).
  4. Remove the steak from the grill and let it rest for 3-5 minutes before slicing against the grain.
Corn Salad Instructions
  1. In a large bowl, combine fresh corn, crumbled feta, cilantro, green onions, and jalapeño.
  2. Drizzle with lime juice and season with salt and black pepper. Toss gently and let chill in the refrigerator.
  3. Serve the sliced steak on a platter with the corn salad on top.
