  • 2 medium Zucchini sliced into half-moons

  • 2 cloves Garlic minced
  • 1 teaspoon Dried Oregano or 3 teaspoons fresh oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper freshly cracked
  • 1/4 teaspoon Crushed Red Pepper Flakes adjust to taste
  • 1/2 cup Chicken Broth or vegetable/beef broth
  • 1/2 cup Grated Parmesan Cheese or nutritional yeast for dairy-free

Method
 

Step‑by‑Step Instructions
  1. Heat the oil in a large skillet over medium heat for about 1-2 minutes until shimmering.
  2. Add the finely chopped onion and sauté for 3-4 minutes until soft and translucent.
  3. Stir in the minced garlic and cook for 30 seconds, stirring constantly.
  4. Add ground turkey, breaking it up with a wooden spoon, and cook for 6-8 minutes until browned.
  5. Slice zucchini into half-moons and stir into the skillet, cooking for 4-5 minutes until tender.
  6. Sprinkle with oregano, salt, pepper, and red pepper flakes, stirring well to combine.
  7. Pour in chicken broth, mixing thoroughly and simmering for 3-4 minutes.
  8. Stir in grated Parmesan cheese until melted and creamy.
  9. Remove from heat, plate immediately, and garnish with additional Parmesan if desired.
