Method
 

Preparation Steps
  1. In a mixing bowl, whip together yogurt, peanut butter, and sweetener until smooth.
  2. Fold in chocolate chips gently using a spatula.
  3. Drop blobs of the mixture onto a parchment-lined tray and press in popsicle sticks if desired.
  4. Smooth the tops with a spatula, sprinkle with chopped peanuts and press them in.
  5. Freeze the tray for 1-2 hours until the bars are firm.
  6. Melt chocolate chips and coconut oil in a double boiler or microwave until smooth.
  7. Dip each bar into the melted chocolate, letting excess drip off.
  8. Return dipped bars to the freezer for another 30-60 minutes to set the chocolate.
