- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle it with 1 tablespoon of olive oil, then wrap it tightly in aluminum foil. Roast the garlic for 30-35 minutes until golden, soft, and fragrant.
- While the garlic is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted and bright green. Season lightly with salt and pepper to taste.
- Once the garlic is roasted, let it cool slightly and squeeze the cloves into a mixing bowl. Mash the roasted garlic and mix with ricotta cheese, half of the mozzarella, dried oregano, and a pinch of salt and pepper until smooth.
- Spread the creamy garlic-ricotta mixture over the pre-made pizza crust. Layer with sautéed spinach, remaining mozzarella, and crumbled feta cheese. Sprinkle with crushed red pepper flakes.
- Increase the oven temperature to 475°F (245°C). Bake the assembled pizza for 12-15 minutes until the crust is golden brown and cheese is bubbly.
- Remove from the oven, let cool for a couple of minutes, garnish with fresh basil leaves, slice into wedges, and serve warm.
