Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle it with 1 tablespoon of olive oil, then wrap it tightly in aluminum foil. Roast the garlic for 30-35 minutes until golden, soft, and fragrant.
  2. While the garlic is roasting, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted and bright green. Season lightly with salt and pepper to taste.
  3. Once the garlic is roasted, let it cool slightly and squeeze the cloves into a mixing bowl. Mash the roasted garlic and mix with ricotta cheese, half of the mozzarella, dried oregano, and a pinch of salt and pepper until smooth.
  4. Spread the creamy garlic-ricotta mixture over the pre-made pizza crust. Layer with sautéed spinach, remaining mozzarella, and crumbled feta cheese. Sprinkle with crushed red pepper flakes.
