- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle it with olive oil, and wrap it in aluminum foil. Roast for 30-35 minutes until tender.
- In a skillet over medium heat, add 1 tablespoon of olive oil. Once shimmering, add the chopped spinach and sauté for 2-3 minutes until wilted. Season and set aside.
- In a mixing bowl, mash the roasted garlic cloves. Add ricotta, half of the mozzarella, oregano, and salt/pepper. Mix until smooth.
- Spread the garlic-ricotta mixture over the pizza crust. Layer with sautéed spinach and top with remaining mozzarella and feta. Dust with red pepper flakes if desired.
