Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare each chicken breast by slicing horizontally to create a pocket, or pound to an even thickness.
  2. In a mixing bowl, combine ricotta cheese, grated Parmesan, fresh spinach, basil, parsley, garlic powder, salt, and pepper. Mix until creamy and well-blended.
  3. Fill each chicken breast pocket with the ricotta mixture and secure with toothpicks or twine.
  4. In an oven-safe skillet, heat olive oil over medium-high heat. Sear each stuffed chicken roll for 3-4 minutes on each side until golden brown.
  5. Pour marinara sauce over the seared chicken rolls, then transfer to the oven and bake for 20-25 minutes, checking that the internal temperature reaches 165°F (75°C).
  6. Remove from oven, let cool slightly, remove toothpicks or twine, and serve with extra marinara sauce on the side.
