For the Pasta

For the Vegetables
  • 1 Cucumber peeled and sliced into 1/2-inch half-moons
  • 1 pint Tomatoes halved or quartered
  • 1 Red Bell Pepper diced into 1/2-inch pieces
  • 1 Yellow Bell Pepper diced
  • 1 Red Onion quartered and thinly sliced
For the Dressing
  • 2/3 cup Olive Oil extra virgin for best flavor
  • 1/2 cup Red Wine Vinegar
  • 1 Lemon Juice freshly squeezed
  • 1 tbsp Oregano dried
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Salt to taste
  • 1/4 tsp Pepper to taste
For the Finish
  • 5 oz Feta Cheese crumbled
  • 2 tbsp Fresh Dill chopped

Method
 

Step-by-Step Instructions
  1. Prep the vegetables by washing and slicing cucumber, quartering tomatoes, and dicing bell peppers and red onion.
  2. Cook pasta in a large pot of salted boiling water for 9-10 minutes. Drain and rinse under cold water.
  3. Make the dressing by whisking olive oil, red wine vinegar, lemon juice, oregano, garlic powder, salt, and pepper.
  4. Combine cooled pasta with prepared vegetables, then pour dressing over and toss gently.
  5. Fold in feta cheese and dill, then let rest for 15-20 minutes before serving.
  6. Serve cold, adjusting seasoning if necessary.
