Step-by-Step Instructions
  1. Preheat your oven to 360°F (180°C). Gather your mixing equipment.
  2. In a large mixing bowl, whisk together the egg, honey, Greek yogurt, vanilla extract, and extra-virgin olive oil until smooth.
  3. Add the plain flour, vanilla-flavored protein powder, baking powder, and baking soda to the bowl. Mix gently until just combined.
  4. Toss your fresh blueberries in a little flour and gently fold them into the batter.
  5. Line a muffin pan with paper liners. Divide the batter evenly among the cups, filling each about 3/4 full.
  6. Bake for 15–20 minutes, checking for doneness with a toothpick.
  7. Allow the muffins to cool in the pan for about 5 minutes, then transfer to a wire rack to cool completely.
