Method
 

Making Bagels
  1. In a small bowl, mix granulated sugar into 1 ½ cups of warm water (110-115°F) until dissolved. Sprinkle yeast over and let stand until frothy.
  2. Whisk in beaten egg and vegetable oil. Gradually add bread flour and salt, mixing until dough forms.
  3. Knead dough on a floured surface for about 10 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  5. After rising, punch down the dough, divide into 12 pieces, and shape into ropes. Form into circles and let rise for an additional 15 minutes.
  6. Boil a pot of water with 2 tablespoons of sugar. Boil each bagel for 1 minute on each side.
  7. Preheat oven to 400°F. Brush boiled bagels with egg wash, top with cheddar cheese and any additional toppings.
  8. Bake bagels for 20-25 minutes until golden brown.
  9. Allow bagels to cool on a wire rack before storing.
