Making Bagels
- In a small bowl, mix granulated sugar into 1 ½ cups of warm water (110-115°F) until dissolved. Sprinkle yeast over and let stand until frothy.
- Whisk in beaten egg and vegetable oil. Gradually add bread flour and salt, mixing until dough forms.
- Knead dough on a floured surface for about 10 minutes until smooth and elastic.
- Place dough in a lightly oiled bowl, cover, and let rise in a warm spot until doubled in size, about 1 to 1.5 hours.
- After rising, punch down the dough, divide into 12 pieces, and shape into ropes. Form into circles and let rise for an additional 15 minutes.
- Boil a pot of water with 2 tablespoons of sugar. Boil each bagel for 1 minute on each side.
- Preheat oven to 400°F. Brush boiled bagels with egg wash, top with cheddar cheese and any additional toppings.
- Bake bagels for 20-25 minutes until golden brown.
- Allow bagels to cool on a wire rack before storing.
