Step‑by‑Step Instructions
  1. Wash and chop about 4 medium ripe peaches, removing the pits while leaving the skin on.
  2. In a medium saucepan, combine the chopped peaches, 2 cups of water, and sugar. Heat until it comes to a gentle boil, then simmer for 5-7 minutes.
  3. Allow the peach mixture to cool at room temperature for about 10 minutes, then chill in the refrigerator for 30 minutes.
  4. Strain the cooled peach mixture through a fine mesh sieve into a bowl or pitcher.
  5. In a large pitcher, mix the strained peach juice with the remaining cold water. Squeeze fresh lemons to add 1 cup of juice to the pitcher, and stir well.
  6. Serve over ice, garnished with fresh mint and peach slices.
