Step‑By‑Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking pan lined with parchment paper.
  2. Rinse the carrots, peel if desired, and slice diagonally into approximately 1½ inch pieces.
  3. In a mixing bowl, combine the sliced carrots with olive oil, honey, minced garlic, fresh dill, salt, and black pepper. Toss thoroughly.
  4. Transfer the coated carrots onto the lined baking pan, making sure to leave space between pieces. Reserve any leftover liquid.
  5. Roast the carrots for 20 to 25 minutes until tender and caramelized.
  6. During the last 5-10 minutes, baste the carrots with the reserved liquid.
  7. Transfer roasted carrots to a serving dish and sprinkle crumbled feta cheese on top, garnishing with dill.
