- Preheat your oven to 425°F (220°C) and prepare a baking pan lined with parchment paper.
- Rinse the carrots, peel if desired, and slice diagonally into approximately 1½ inch pieces.
- In a mixing bowl, combine the sliced carrots with olive oil, honey, minced garlic, fresh dill, salt, and black pepper. Toss thoroughly.
- Transfer the coated carrots onto the lined baking pan, making sure to leave space between pieces. Reserve any leftover liquid.
- Roast the carrots for 20 to 25 minutes until tender and caramelized.
- During the last 5-10 minutes, baste the carrots with the reserved liquid.
- Transfer roasted carrots to a serving dish and sprinkle crumbled feta cheese on top, garnishing with dill.
