- In a mixing bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, ginger, garlic, cumin, coriander, red pepper flakes, sesame oil, and lime juice until smooth.
- Place chicken thighs in a large bowl or zip-top bag. Pour marinade over the chicken, ensuring it's generously coated. Seal and refrigerate for at least 2 hours, or overnight.
- Preheat your grill to medium-high heat (about 400°F) or your oven to 400°F (200°C).
