Step-by-Step Instructions
  1. In a mixing bowl, whisk together soy sauce, honey, peanut butter, rice vinegar, ginger, garlic, cumin, coriander, red pepper flakes, sesame oil, and lime juice until smooth.
  2. Place chicken thighs in a large bowl or zip-top bag. Pour marinade over the chicken, ensuring it's generously coated. Seal and refrigerate for at least 2 hours, or overnight.
  3. Preheat your grill to medium-high heat (about 400°F) or your oven to 400°F (200°C).
  4. For grilling, place the marinated chicken thighs skin-side down on the grill. Cook for 6–8 minutes each side, until skin is crispy and internal temperature reaches 165°F. For roasting, arrange skin-side up on a baking sheet. Roast for 35–40 minutes, basting with leftover marinade.
  5. Remove chicken from heat and garnish with cilantro and sesame seeds. Serve hot with jasmine rice or a fresh salad.
