For the Topping
  • 2 tablespoons Unsweetened Cocoa Powder For dusting.
  • 1/4 cup Grated Dark Chocolate Optional garnish.

Method
 

Preparation Steps
  1. Preheat the oven to 325°F (160°C) and grease the sides of a 9-inch springform pan.
  2. Combine crushed ladyfingers with melted butter and press into the bottom of the pan.
  3. Beat softened cream cheese and mascarpone cheese with sugar until smooth.
  4. Add eggs one at a time, mixing on low speed to prevent overmixing.
  5. Stir in vanilla extract and coffee liqueur, followed by the brewed coffee.
  6. Whip heavy cream to soft peaks and gently fold into the cheesecake mixture.
  7. Pour filling over the crust and smooth the top.
  8. Bake for 45-55 minutes until edges are set with a slight jiggle in the center.
  9. Cool gradually in the oven with the door cracked for an hour.
  10. Chill in the refrigerator for at least 4 hours, preferably overnight.
  11. Dust with cocoa powder and sprinkle with grated dark chocolate before serving.
