Preparation Steps
- In a medium bowl, combine 8 ounces of softened goat cheese and 4 ounces of cream cheese using a hand mixer or spatula. Blend until smooth and creamy.
- Add 2 tablespoons of honey to the blended cheese mixture and gently fold it in with a spatula.
- On a separate plate, combine ½ cup of chopped crispy cooked bacon, ½ cup of chopped pecans, ⅓ cup of dried cranberries, and 1 tablespoon of finely chopped fresh rosemary.
- Lay a piece of plastic wrap on your countertop and spoon the cheese mixture onto the center. Shape it into a log approximately 1.5 inches in diameter.
- After chilling for 15 minutes, unwrap the cheese log and roll it in the coating mixture.
- Transfer the log to a serving platter, arrange arugula around the log, and cover with plastic wrap.
- Chill in the refrigerator for at least 30 minutes before serving.
- Slice the log with a sharp knife and serve with a variety of sturdy crackers or crostini.
