For the Chicken Marinade
  • 1 lb boneless, skinless chicken thighs substitute chicken breast if necessary
  • 3 tbsp olive oil or avocado oil as an alternative
  • 2 tsp ground cumin
  • 1 tbsp ground paprika or smoked paprika for extra aroma
  • 1 tsp ground turmeric no substitute recommended
  • 1 tsp ground cinnamon nutmeg can be a substitute
  • 1 tsp ground black pepper white pepper can be used
  • 1 tsp salt kosher salt for variation
  • 1 tsp ground coriander fresh cilantro can replace if available
For the Garlic Sauce
  • 4 cloves garlic or garlic powder in a pinch
  • 2 tbsp lemon juice vinegar can be used, alters flavor slightly
  • 1 cup plain Greek yogurt sour cream can be a substitute
  • 2 tbsp mayonnaise use vegan alternative if preferred

Method
 

Preparation Steps
  1. In a large mixing bowl, whisk together the olive oil, ground cumin, paprika, turmeric, cinnamon, black pepper, salt, ground coriander, minced garlic, and fresh lemon juice to create a smooth marinade.
  2. Add the boneless, skinless chicken thighs to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat your grill pan or oven to medium-high heat (around 425°F). Grill the marinated chicken for 5-6 minutes on each side or roast in the oven for 25-30 minutes until fully cooked.
  4. While the chicken is cooking, prepare the garlic sauce by mixing Greek yogurt, mayonnaise, minced garlic, lemon juice, and a pinch of salt until smooth. Refrigerate for at least 15 minutes.
  5. After cooking, let the chicken rest for 5 minutes before slicing. Serve in pita or over rice, drizzled with garlic sauce and your favorite toppings.
