  • 400 grams Dried Fruits e.g., raisins, currants
  • 100 ml Brandy can substitute with orange juice
  • 250 grams Butter or vegan butter
  • 200 grams Sugar brown sugar for more flavor
  • 300 grams Flour gluten-free flour can be used
  • 3 large Eggs can substitute with aquafaba
  • 2 teaspoons Baking Powder ensure freshness
Decorations
  • 250 grams Marzipan
  • 250 grams Fondant
  • 100 grams Icing Sugar for dusting or glaze

Method
 

Preparation
  1. Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.
  2. Sift together flour, baking powder, and a pinch of salt in a large mixing bowl.
  3. Cream together the softened butter and sugar until light and fluffy, about 4 to 5 minutes.
  4. Add the eggs one at a time, mixing well after each, then gradually add brandy until smooth.
  5. Fold the dry ingredients into the wet mixture, then gently incorporate the chopped dried fruits.
  6. Pour the batter into the lined baking tray and bake for approximately 1 hour.
  7. Allow the cake to cool in the tray for 10 minutes before transferring to a wire rack.
  8. Once cool, roll out marzipan and fondant, and cover the top of your cake creatively.
