Preparation
- Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.
- Sift together flour, baking powder, and a pinch of salt in a large mixing bowl.
- Cream together the softened butter and sugar until light and fluffy, about 4 to 5 minutes.
- Add the eggs one at a time, mixing well after each, then gradually add brandy until smooth.
- Fold the dry ingredients into the wet mixture, then gently incorporate the chopped dried fruits.
- Pour the batter into the lined baking tray and bake for approximately 1 hour.
- Allow the cake to cool in the tray for 10 minutes before transferring to a wire rack.
- Once cool, roll out marzipan and fondant, and cover the top of your cake creatively.
