- In a large skillet, over medium heat, brown 1 pound of ground beef for about 8β10 minutes until fully cooked, stirring frequently. Drain excess grease, add taco seasoning, and ΒΌ cup of water. Simmer for 5 minutes.
- Warm flour tortillas in a dry skillet over low heat for about 30 seconds on each side or microwave for 15-20 seconds.
- Lay a warm tortilla flat, layer with seasoned beef, cooked rice, nacho cheese, chipotle sauce, sour cream, and a sprinkle of cheddar and mozzarella cheese before folding.
- Heat 1 tablespoon of butter/oil in the same skillet over medium heat, place the burrito seam-side down, and grill for about 3β4 minutes until golden and crispy. Flip and grill for another 3-4 minutes.
- Remove from the skillet, let rest for a minute, slice in half, and serve with guacamole or salsa.
