  • 1 cup Cooked White Rice or brown rice/quinoa
  • 1/2 cup Sour Cream or Greek yogurt/dairy-free alternative
  • 1 cup Nacho Cheese Sauce or melted cheese/vegan cheese
  • 2 tablespoons Chipotle Sauce adjust to taste
For Assembly
  • 1 cup Shredded Cheddar Cheese or mozzarella/Mexican blend
  • 1 cup Shredded Mozzarella or substitutions as above
  • 4 large Flour Tortillas or corn tortillas for gluten-free
For Grilling
  • 1 tablespoon Butter/Oil or olive oil for a healthier option

Method
 

Step-by-Step Instructions
  1. In a large skillet, over medium heat, brown 1 pound of ground beef for about 8–10 minutes until fully cooked, stirring frequently. Drain excess grease, add taco seasoning, and ΒΌ cup of water. Simmer for 5 minutes.
  2. Warm flour tortillas in a dry skillet over low heat for about 30 seconds on each side or microwave for 15-20 seconds.
  3. Lay a warm tortilla flat, layer with seasoned beef, cooked rice, nacho cheese, chipotle sauce, sour cream, and a sprinkle of cheddar and mozzarella cheese before folding.
  4. Heat 1 tablespoon of butter/oil in the same skillet over medium heat, place the burrito seam-side down, and grill for about 3–4 minutes until golden and crispy. Flip and grill for another 3-4 minutes.
  5. Remove from the skillet, let rest for a minute, slice in half, and serve with guacamole or salsa.
