Step-by-Step Instructions for Low Carb Chicken Casserole
  1. Preheat your oven to 375°F (191°C).
  2. If using frozen spinach, thaw and drain. For fresh broccoli, par-boil florets for 1-2 minutes, then drain.
  3. In a large mixing bowl, combine chicken, bacon, vegetables, and garlic. Add ranch dressing and half of the mozzarella and cheddar cheese, mixing thoroughly.
  4. Grease a 9x13 inch casserole dish and pour in the chicken mixture, spreading evenly. Sprinkle remaining mozzarella and cheddar on top.
  5. Bake for about 15 minutes until bubbly and golden.
