Crust
  • 1 cup Vanilla Wafer Crumbs Finely crushed
  • 1/4 cup Granulated Sugar Substitutable with coconut sugar
  • 1/4 teaspoon Salt Adjust to taste
  • 1/2 cup Unsalted Butter Melted; vegan option available
Filling
  • 8 ounces Cream Cheese Room temperature, can use low-fat
  • 1 box Instant Pistachio Pudding Mix Can substitute with vanilla pudding
  • 1 teaspoon Vanilla Extract Optional almond extract can be used
  • 1 teaspoon Pistachio Extract Omit if unavailable
  • 1/2 cup Powdered Sugar Agave syrup as an alternative
  • 1 cup Heavy Cream Coconut cream as dairy-free option
Topping
  • 1 cup Heavy Cream Whipped; sweetened with powdered sugar
  • 1/4 cup Chopped Pistachios For garnish

Method
 

Prepare the Cheesecake
  1. In a medium bowl, combine vanilla wafer crumbs, sugar, and salt, then mix in melted butter and press into a springform pan. Chill for 30 minutes.
  2. In a large bowl, beat cream cheese until creamy. Gradually add pudding mix, vanilla, pistachio extract, and powdered sugar. Fold in heavy cream and whip until fluffy.
  3. Spoon the filling into the chilled crust, smoothing the top. Cover with plastic wrap and refrigerate for at least 6 hours or overnight.
  4. Whip heavy cream with powdered sugar until stiff peaks form. Spread whipped cream over the cheesecake and sprinkle with chopped pistachios.
  5. Release the cheesecake from the pan, slice, and serve chilled.
