Step-by-Step Instructions
  1. Grate about 2-3 medium zucchinis until you have roughly 4 cups. Squeeze the grated zucchini in a kitchen towel to remove excess moisture. Combine zucchini with eggs, mozzarella, salt, garlic powder, and black pepper in a bowl.
  2. Preheat the oven to 400°F (200°C). Grease a baking dish, then spread the zucchini mixture evenly in the dish and press down. Bake for 20-25 minutes until the crust is firm and light golden.
  3. Allow the baked crust to cool for about 5-10 minutes. Spread pizza sauce evenly on the crust, then add your favorite toppings and sprinkle with additional cheese.
  4. Return the casserole to the oven and bake for an additional 10-15 minutes until the cheese is melty. Broil for 2-3 minutes for a crispier top if desired.
