  1. In a microwave-safe bowl, gently heat 1 cup of peanut butter on high for about 20-30 seconds, just until warm. Stir in sifted powdered sugar and a pinch of ground cinnamon until silky and smooth. Spoon out small dollops (about 1 tablespoon each) onto wax paper and freeze for at least 1 hour until firm.
  2. In a large mixing bowl, sift together 2 cups of all-purpose flour, ½ cup of Dutch process cocoa powder, 1 teaspoon of baking soda, and ½ teaspoon of salt. In a separate bowl, mix ½ cup of melted unsalted butter with ½ cup of brown sugar, ½ cup of granulated sugar, 1 teaspoon of pure vanilla extract, and 2 large eggs until well combined. Gradually combine the dry and wet mixtures, then fold in 1 cup of semi-sweet chocolate chips.
  3. Preheat your oven to 350°F (175°C), and let the cookie dough rest for about 10 minutes to firm up slightly. With a 2-TBSP cookie scoop, portion out the dough and roll it into balls. Press your thumb gently into the center of each ball to create an indent, then place a frozen peanut butter dollop inside and encase it completely with the dough, forming a smooth ball.
  4. Line two baking sheets with parchment paper, placing 6 cookie balls per sheet to allow for spreading. Bake the cookies in the preheated oven for 13-15 minutes, or until the edges are set but the center is still soft. Allow them to cool on the baking sheets for 5 minutes before transferring to a wire rack.
