- Spread a layer of Hellmann’s mayonnaise on one side of each slice of bread.
- Heat a non-stick skillet over medium heat for about 2 minutes.
- Lay one slice of bread in the pan, mayonnaise side down. Top with white cheddar cheese and roasted veggies.
- Place the second slice on top, mayonnaise side up, and press down gently.
- Grill for 3-4 minutes until the bottom is golden brown and crispy.
- Flip the sandwich and grill the other side for another 3-4 minutes.
- Transfer to a cutting board, let it rest, then cut in half to serve.
