Method
 

Step-by-Step Instructions
  1. Spread a layer of Hellmann’s mayonnaise on one side of each slice of bread.
  2. Heat a non-stick skillet over medium heat for about 2 minutes.
  3. Lay one slice of bread in the pan, mayonnaise side down. Top with white cheddar cheese and roasted veggies.
  4. Place the second slice on top, mayonnaise side up, and press down gently.
  5. Grill for 3-4 minutes until the bottom is golden brown and crispy.
  6. Flip the sandwich and grill the other side for another 3-4 minutes.
  7. Transfer to a cutting board, let it rest, then cut in half to serve.
